Select Casks: The Art of Maturation

At Mr. Fox Irish Whiskey, maturation begins in ex-bourbon barrels, where the spirit builds a foundation of vanilla, caramel, and toasted oak.

To deepen complexity, we finish our whiskey in carefully chosen sherry, red wine, and stout casks—each bringing its own distinct character. Sherry adds dried fruit and warm spice, red wine imparts dark berries and oak tannins, and stout delivers roasted coffee, bittersweet chocolate, and malt richness.

Each expression is a reflection of expert cask selection and time-honoured craft—a whiskey shaped by wood and time, and designed to be savoured. Every sip tells a story.
